Roasted Brussel Sprouts

A knockout Brussel sprout recipe that everyone will be raving about!


Fresh Brussel sprouts deliver big flavor and abundant nutritional value; all packed into a small package that resembles a baby cabbage. Brussel sprouts are cruciferous vegetables making them part of the brassica oleracea plant species. This includes cabbage, cauliflower, broccoli, and kale. Fun fact: Brussels sprouts were really named after the capital of Belgium, where they were a popular crop dating back to the 16th century. Brussel Sprouts were introduced to North America in the 18th century, and by the early 1900s, they became an established commercial crop in California. With fertile fields and cool coastal weather, California produces more Brussel Sprouts than any other state.

Brussel sprouts have many health benefits as they are rich in vitamins, minerals, and antioxidants. Brussel sprouts are especially high in fiber, and vitamins K and C. Antioxidants are compounds that reduce oxidative stress in our cells and help to lower the risk of chronic disease. Some studies suggest that the high levels of antioxidants found in Brussel sprouts could protect against physical ailments such as inflammation, disease, and high blood sugar levels.

We think Brussel sprouts are one of the easiest vegetables to implement into your diet since cooking them can be easy; however, those poor little sprouts can be under-appreciated. Many people do not like the taste simply because of how they were prepared. This roasted Brussel sprout recipe transforms them into delicious, sweet and savory morsels that are tender on the inside and crisp on the outside. This recipe uses caraway seeds to great effect since they add a nutty, bittersweet flavor with a hint of citrus and pepper. Caraway seeds are commonly used in popular cabbage dishes, so it is no surprise that their flavor perfectly compliments that of Brussel sprouts.


Selection and Storage: The finest selection of Brussel sprouts can be found in this week's Spade & Plow CSA box. To store Brussel sprouts, place it in a plastic bag in the crisper drawer. They will keep fresh for 4-7 days in the refrigerator.


Roasted Brussel Sprout Recipe:

This recipe was created for our CSA members to utilize the produce they received in this week’s CSA box. We hope to inspire you to try new things.


Recipe:

  1. Preheat oven to 425℉

  2. Cut Brussel Sprouts in half

  3. Mince garlic

  4. In a large mixing bowl, mix together garlic, caraway seeds, Brussel sprouts, and olive oil. 

  5. On a baking sheet, place Brussels sprouts cut-side down. Lay sprigs of rosemary on top of brussels.

  6. Roast for 18-20 minutes.

Ingredients:

  • Brussel Sprouts

  • 2-3 Cloves Garlic

  • 1 tsp. Caraway seeds

  • 2 Tb Olive Oil

  • 2-3 sprigs of Rosemary

  • Salt & Pepper to taste



Toss Brussel sprouts with olive oil, garlic, and caraway seeds.
