Completely radicchious. No really, we’re in love.

Radicchio is one of those elusive crops that has qualities not quite like lettuce, but not quite like cabbage either. Chicories, in general, are bitter and kinda arbitrary, and often argued…very replaceable. But when prepared the right way, they’re a total showstopper!

These radicchios have been taking up prime real estate in our fields all winter long. We trust that you all will give them the chance that they deserve! We’ll be showcasing the four varieties we’ve grown these next several weeks.

The varieties that we've grown have softer, more tender leaves, which lead to more variety of uses. From grilling to braising, to lightly baking, to tossing in the salad bowl raw with other leafy greens, radicchio’s got that extra something proving that, yep, sometimes bitter is better.
