Green Luobos Daikon Radish Soup w/ Broccoli

Green Luobos daikon radishes are sweet and spicy roots that give this soup a slight peppery taste and silky texture.



Radishes are popularly used in Asian cooking and know for their potent medicinal properties. Green Luobos daikons are an exciting and unique heirloom variety and are best known for their color, which fades from jade green to white. Their flavor is peppery followed by a pleasant sweetness. Green Luobo radishes are an excellent source of antioxidants, electrolytes, minerals, vitamins, and fiber. They can be eaten raw or cooked.

Broccoli and fresh parsley add more depth to this dish and are supercharged with antioxidants, vitamins C and E, minerals, and anti-inflammatory properties that deliver an immune system boost!

INGREDIENTS:

  • 3-4 Green Luobos daikon radishes

  • 2 cups Broccoli, chopped

  • 1 Shallot, minced

  • 1 clove garlic, minced

  • 1/4 cup Parsley

  • 4 Tb Extra Virgin Olive Oil

  • Salt & Pepper to taste

  • 2 Cups Water

RECIPE:

  • Steam Broccoli and Radish with two Cups of water until you can cut the broccoli with a butter knife.

  • Save the water! It has vital nutrients in it!

  • Blend steamed broccoli and radish, fresh parsley, 2 Tb Olive oil, and water from the pot until smooth.

  • In the same pan, saute shallots and garlic, for 1 minute

  • Add in blended soup, stir

  • Add Salt & Pepper to taste.

  • Serve with a drizzle of Olive Oil
