Baby Red Mustard Salad w/ Honey Tahini Dressing

Red Mustard is nutty with a hint of spice. Pair with a sweet honey, nutty tahini, and crisp roots for a salad that is out of this world!


You may have recently read about Spade & Plow’s Baby Greens, but did you consider trying some? One of our favorites is the Red Mustard. It is a rare variety that is uncommon at the market. It is a little tricky to cultivate -requiring the right soil pH, temperature, and tender love and care. We have finally found our successes with this variety, and we hope to keep it around throughout all the seasons.

As with other mustard greens, Baby Red Mustard is just as high, if not higher, in nutritional content. It is a rich source of vitamins A, C, and K. It has detoxifying and anti-inflammatory elements, and it is easy on the digestive system.

Selection and Storage: The finest selection of Spade & Plow’s Baby Red Mustard can be found in this week's CSA box or at the Spade & Plow’s farmers market booth. To store Greens, keep them in a plastic bag and in the crisper drawer. They will keep fresh for 4-7 days in the refrigerator.

Baby Red Mustard Salad w/ Honey Tahini Dressing

This recipe was created for our CSA members to utilize the produce they received in this week’s CSA box. We hope to inspire you to try new things.

This Recipe features two CSA add-ons from local businesses: Roxanne’s Z’Atar Seasoning and Amen Bee’s Honey!

Ingredients:

  • 1/2 lb. Baby Red Mustard Greens

  • 2 Scallions, chopped

  • 4-5 French Breakfast Radishes, sliced

  • 1/4 Cup Parsley, chopped

  • 1 lemon, zest and juice

  • 1 Tb Tahini

  • 1 Tb. Honey

  • 2 Tb. Water

  • 1 Tb. Apple Cider Vinegar

  • 1 tsp. salt

  • 1 tsp. pepper

  • Pistachios (optional)

  • Rozanne’s Z’Atar seasoning

  • In a small bowl, whisk together tahini, lemon juice and zest, honey, water, vinegar, salt and pepper.

  • In a large mixing bowl, mix together salad ingredients: Red Baby Kale, Scallion, Radish, and parsley.

  • Add in your dressing. Toss with tongs until evenly coated.

  • Generously sprinkle Rozanne’s seasoning on to your plated Salad.

Variations:

  • Add fresh cut citrus such as grapefruit or mandarins.

  • Use pine nuts, walnuts, or slivered almonds instead of pistachios.

  • Add your favorite creamy cheese.
