Steamed Artichokes + 3 Dipping Sauces
Artichokes, our favorite edible flower!
This week’s recipe features Spade & Plow’s amazing artichokes! The seed variety is called Madrigal, which coincidentally rhymes with magical, and that they are! This globe-shaped variety has hearts that are creamy and tender while being larger and meatier to satisfy your appetite. Not to mention artichokes are incredibly good for you! They are also one of the most antioxidant-rich vegetables! They are low in fat, but a rich source of fiber, antioxidants, vitamins, and minerals. They are particularly high in vitamins C and K, as well as being an excellent source of folate, iron, and potassium.

Steamed Artichokes + 3 Dipping Sauces
Steaming Artichokes:
Steaming artichokes hydrates them from leaves to hearts-center, and retains their nutritional value. Seasoning the water with a bay leaf and a few lemon wedges enhances the natural flavor of the artichoke. Make sure to check water levels halfway through. Add a cup or two if you are running low!
Ingredients:
2 Artichokes
1 Lemons
1 Bay Leaf
Cook time: 45 minutes over medium/low heat
Cut the stem and top of artichoke(about ½ inch of the stop). Taking a pair of kitchen shears, you can cut the top of each leaf about 1/2 of an inch., but this step is optional
Place bay leave and 1 lemon, sliced, in 2 inches of water. Put steaming basket over the lemon, bay leaf, and water. Place the artichokes cut side down and steam for 45 minutes. If using an Insta-Pot, reduce time to 15 minutes.
Garlic-Herb Sauce
Ingredients:
¼ Cup Greek Yogurt¼
Cup mayonnaise
1-2 garlic clove, minced
1 ts dill
Salt & Pepper to taste
Variation: Mix in 1 Tsp Smoked Paprika to half of the mix
Mix & Serve!
Magical Dippings Sauce
Ingredients:
3 Tb. Mayonnaise or Greek Yogurt
1 Tb. Lemon Juice
1 Tb. Dijon Mustard
⅛ ts. Sugar
⅛ ts. Garlic powder
Pinch of salt
Mix & Serve!
Simple Garlic Butter Sauce:
Ingredients:
1/2 Cup Butter (unsalted)
4-5 Fresh garlic cloves
1 tsp Garlic powder
Salt & Pepper to taste
Recipe: Use a garlic press or Microplane to mince butter in small pieces. Add to melted butter
