Charred Little Gems w/ Green Goddess Dressing

Little Gems have crunchy yet tender leaves with a thick and sweet heart. Living up to their name, they truly are little gems.

INGREDIENTS

  • 2- 3 Little Gems

  • Sliced Almonds

  • 1 Tbsp olive oil

  • 2 Garlic cloves or 2 Green Garlic Stems

  • 2 Scallion greens or Spring Shallot tops

  • juice of one lemon

  • 1/4 cup Parsley(optional)

  • 1/4 cup Basil(optional)

  • 1 cup Avocado flesh

  • 1 Tbsp Coconut aminos

  • 1 Tbsp Tahini

  • 1 Tbsp Apple cider vinegar

  • 2-4 Tbsp water, add gradually for desired consistency

  • Salt and pepper to taste

RECIPE

  1. Preheat the grill to 400 F

  2. Wash and slice little gem in half keeping the stem intact. Brush cut side with olive oil and place on hot grill for 2-4 minutes.

  3. Combine garlic, scallion, parsley, basil, avocado, lemon juice, coconut aminos, tahini, apple cider vinegar and water into a food processor, blend till smooth. add more water if need be.

  4. Serve little gems with almonds and green goddess dressing.



At Spade & Plow, we want to bring our customers a variety of products. We chose to include Little Gems in our lettuce line-up because of its fanfare at markets, as well as whole-sellers and chefs. However, growing little gem lettuce is no easy task in summer due to their liking of a moderate climate, but with a little more tenderness and care for our little gems, we can provide it to all of our customers throughout the season. Harvesting little gems depends on the climate, but they can often be found abundant at markets in the early summer and late fall. Little Gems are a low-calorie green packed with vitamin A and are growing in popularity at Farmers Markets.
