CHRISTMAS STIR FRY
WITH ALL THESE FESTIVE WINTER GREENS, WE DECIDED TO STIR THINGS UP IN THE KITCHEN THIS WEEK!
A DASH OF GINGER, LOADS OF GARLIC, AND A MEDLEY OF GREEN AND RED WINTER GREENS,
THIS STIR-FRY RECIPE IS THE PERFECT WAY TO BOOST YOUR APPETITE AND ENERGY DURING THE HOLIDAY SEASON.
RECIPE
Clean, trim, and cut the bok choy & red chard into 1-inch strips perpendicular its stalk.
Finely chop the garlic and green onions.
Chop the purple daikon radishes and onion into 1-inch pieces.
Mix ingredients for stir-fry sauce, then set aside.
In a large pot mix together olive oil, purple daikon radishes, onions, and garlic.
Cook on med-high heat until slightly browned.
Add the leafy greens, red chard and bok choy, as well as the stir-fry sauce.
Cover with a lid for 5 minutes while the greens cook down in the pot.
remove lid, and stir until sauce is completely mixed through the dish.
remove from heat, top with chopped green onions, and serve.
**best enjoyed over rice or fresh noodles!
INGREDIENTS
7 LEAVES OF RED CHARD
1 LARGE BUNCH OF BOK CHOY
3 PURPLE DAIKON RADISHES
4 CLOVES GARLIC
1 ONION
GREEN ONION
OLIVE OIL
STIR-FRY SAUCE:
2 tablespoons rice vinegar
3 tablespoons soy sauce
2 teaspoon fresh grated ginger
1 teaspoon sesame oil
1 teaspoon brown/white sugar
