We love growing baby greens this time of the year as more vibrantly colored leaves emerge from cooler temperatures. It took us a few tries to find the right variety of baby kale, but we are stoked about this one! This special kale is a new seed variety called KX-1. Its glossy, deep red leaves pack a sweet kale flavor.

Growing, harvesting, washing, and packing our baby greens requires a lot of extra work on our end, but we think its totally worth their flavor and nutrition. Kale is a Pottasium and Vitamin C powerhouse when compared to other leafy greens. These tender greens are versatile as well. Keep them handy for salads, smoothies, and sautees.
