This weeks CSA box add-on: Large Summer Squash

At the end of summer we expect high temperatures to have some effects on production, but we didn’t expect to see our plants thrive.

The hottest days of summer have given our squash a surprising boost in size. They really enjoyed the heat. Well, that makes one of us. The heat waves can kill some plants, while others will thrive. Since nature was so generous, we have included large summer squash as an add-on to this week box share. Each order will have one of each for $5.

So, what does one do with such a big squash?

Larger zucchinis and patty-pans are great for stuffing. Since the seed cavity is much larger, it is best to scoop them out.

Some variations:

  • Cranberry, walnut and chicken stuffed squash

  • Pesto chicken stuffed squash

  • Squash lasagna

  • Beans, quinoa, and mushroom stuffed squash
