We planted these suckers at the beginning of February in the greenhouse, where they took 3 months to germinate and grow strong enough for transplanting. Another 2.5 months in the field, and we are finally seeing our first harvest! Luckily, though, this crop will carry us into early fall.

The pipe dream of veg, leeks are one of those crops for us that we have the most trouble with, especially when it comes to the consistency of checking up on them. It can be easy to forget about them when they take so much time to grow! Because it is a time of year where we are naturally watering more, both because of the weather and because of the crops (ie. tomatoes), they certainly benefit from more watering.

The beauty of having leeks around for a little while is in the versatility of how to use and prepare them.

Swap ‘em for onions, stew them in soups, braise them in butter, or grill them whole! The world is our oyster! Or maybe just a leeky pipe dream…
