Don’t freak out! Kohlrabi looks has a funny name and looks sort of weird, but has a mild flavor and a lovely crunch! With a texture like radish and a taste that borders between jicama and the stem of broccoli, this root bodes well raw, roasted, and anything in between.
*note: you may want to peel the kohlrabi, apple, and radish before cutting into matchsticks to make for a more tender salad
2-3 bulbs Kohlrabi, cut into matchsticks or shredded
3 Apples, cut into matchsticks or shredded
1 Watermelon Radish, cut into matchsticks or shredded
Lemon juice to taste
Olive oil to taste
Salt and pepper to taste
Mix kohlrabi, apple, and radish matchsticks together in a bowl with olive oil and lemon juice. Season with salt and pepper.
